Prof. Caroline Stokes heads the Food and Health research group at Humboldt-Universität zu Berlin. Caroline studied psychology and nutrition and holds a PhD and a habilitation in medical nutrition. Prior to her appointment at Humboldt-Universität, she worked at the Medical Faculty of Saarland University in Germany, the Medical Research Council, Cambridge and the National Health Service in the UK.
Her research focuses on elucidating the functional health effects of nutrients, such as vitamin D, for the prevention and management of disease. The group is also researching the nutritional composition of plant products and their health promoting properties.
